Chicken Noodle Soup

Your LOVED ONE is sick. She has a cold and there is nothing you can do for her. There is no cure for that. What you can do, though, is rustle up a big pot of chicken noodle soup. Chicken noodle soup has the vitamins and minerals that humans need to support ther immune system. A supported immune system leads to a quicker recovery time for your LOVED ONE.

Your LOVED ONE says that she doesn't like chicken noodle soup. This is just the cold talking. Start by sweating some diced carrot, celery, and onion in some olive oil in a medium to large soup pot. This is what the French call a mirepoix and it is a backbone of French cooking, as well as the essential element in this dish.

Your LOVED ONE insists that she is not hungry, and, in fact, doesn't even have a cold. This means that the virus has gotten to the brain and is making her say terrible untruths. Ignore her lies and turn your attention towards the chicken. It's time to striip the meat off of the bones. Once all of the meat is recovered, throw it in with your mirepoix. The carrots, onion, and celery should be softened now, but not too browned.

Your LOVED ONE can't understand why you aren't listening to her and why you haven't spoken one word in a week. She pleads with you to just stop making soup, and that she is tired of soup, and that you've made six different soups this week. Add the chicken stock to the pot. Turn up the heat until simmering and then turn it down until you get a slow simmer. Add some salt and pepper, dried parsley, and the bay leaf. Let the soup simmer for at least 30 minutes.

Your LOVED ONE tells you that she is calling an ambulance and that there is obviously something wrong with you. Luckily, this cold virus that is causing her regrettable actions will be no match for this soup. About 10-15 minutes from serving, add in the egg noodles. This will give them some time to soften, but not enough time for them to turn to mush.

The ambulance arrives and the paramedics are trying to reason with you. With your voice ragged from disuse, you suggest that everyone just needs to settle down and have some soup because all of their colds are really getting the better of them.

Garnish with crackers.
